200g Blue Cheese
Whole Milk
40g Plain Flour
1 Large Garlic Clove - finely minced
40g Salted Butter
1 Onion - Finely Diced
Slowly melt the butter in. large pan. Add the onion and garlic and slowly sauté until soft.
Add the flour and combine until a thick paste and then cook for roughly 2 minutes.
Add milk gradually stirring to combine until the sauce is the desired consistency. Cook for 5-10 minutes adding more milk if it becomes too thick. Crumble in the blue cheese and continue to cook until the cheese has melted and combined into the sauce, Taste and season as required.
