10 Red Birds Eye Chillies
8 Shallots
2 Garlic Cloves minced.
4 Fresh Kaffir Lime Leaves
2 Lemongrass Stalk
1 Lime
Salt
Sugar
Olive oil
Dice the chilli and shallots as finely as possible. Remove the stems from the lime leaves and dice as finely as possible. Remove the outer skin if the lemongrass until left with the soft white inner part, dice as finely as possible. Add all of the above to a bowl and mix.
Stir in the garlic, olive oil, juice of a lime and salt and sugar to taste.
