Tomato Bruschetta

Ingredients

1kg Ripe High Quality Mixed Colour Tomatoes 

Small Bunch of Basil Leaves

Balsamic Vinegar

1 Large Garlic Cloves - finely minced

Olive Oil

1 Red Onion - Diced

1 tsp Sea Salt

Method

Roughly dice the tomatoes and place in a large bowl. Hand squeeze the tomotoes and drain off the excess liquid. Add the salt and stir, cover and leave for 1hr. More liquid will have been released which needs to be drained again. 


Add the garlic and onion. Add preferred amount of oil and balsamic. Pick the best and youngest basil leaves and tear and add to the bowl. Mix well. Leave to marinande for at leat 3 hours, overnight works well. 


More moisture will be released as it marinades, this can be drained off or left depending on preference.
